Apricot Cashew Power Balls

 Time:  5-10 minutes prep    Makes:  2 dozen   Difficulty: Easy

Ingredients:

  • 1 1/2 cups cashews
  • 1 1/2 cups dried apricots
  • 1/2 dessicated coconut (extra for coating)
  • 1/2 teaspoon ginger powder or grated ginger
  • 1/4 teaspoon cardamon powder
  • zest of one orange
  • pinch sea salt

Method

  • Combine all ingredients in food processor and mix well
  • Roll into balls and coat with extra coconut
  • Chill for an hour before consuming
  • For best results store in fridge
