Salmon Patties

Time: 1 hour       Serves: 2         Difficulty: Easy

Ingredients:

  • 210g can pink salmon
  • 2 medium potatoes or 1 small sweet potato
  • 2 spring onions, chopped
  • 1 egg, lightly beaten
  • fresh parsley, chopped
  • salt and pepper

Method:

  • Boil and mash the potatoes.
  • Mix the mashed potato with all other ingredients.
  • Make into patties and refrigerate for half an hour.
  • Shallow fry until golden brown.
