Time: 1 hour Serves: 2 Difficulty: Easy
- 210g can pink salmon
- 2 medium potatoes or 1 small sweet potato
- 2 spring onions, chopped
- 1 egg, lightly beaten
- fresh parsley, chopped
- salt and pepper
- Boil and mash the potatoes.
- Mix the mashed potato with all other ingredients.
- Make into patties and refrigerate for half an hour.
- Shallow fry until golden brown.
