Ingredients
Mixture
- 300g frozen mixed berries
- 2 apples, peeled, cored, chopped
- 1 tblsp lemon juice
- 2 tblsp coconut sugar
- vanilla or coconut yoghurt, to serve
Crumble
- 1/2 cup rolled oats
- 1/2 cup quinoa flakes
- 1/4 cup shredded coconut
- 2 tblsp coconut sugar
- 2 tblsp coconut oil
Method
- Preheat oven to 180 degrees.
- In a medium saucepan combine half the berries, apples, juice and sugar on medium heat. Cook, covered, for 3-4 minutes or until apples soften. Stir in the remaining berries.
- Divide mixture evenly between six 3/4 cup ovenproof ramekins. You could certainly use a pie dish instead and increase the cooking time by 5 minutes.
- In a medium bowl, combine all crumble ingredients. Rub together. Spoon evenly over the fruit in the ramekins.
- Bake for 12-15 minutes or until crisp and golden.
- Serve with yoghurt. Yum!
