Berry Quinoa Crumbles

Time: 45 minutes       Serves: 6         Difficulty: Easy

Ingredients

Mixture

  • 300g frozen mixed berries
  • 2 apples, peeled, cored, chopped
  • 1 tblsp lemon juice
  • 2 tblsp coconut sugar
  • vanilla or coconut yoghurt, to serve

Crumble

  • 1/2 cup rolled oats
  • 1/2 cup quinoa flakes
  • 1/4 cup shredded coconut
  • 2 tblsp coconut sugar
  • 2 tblsp coconut oil

Method

  1. Preheat oven to 180 degrees.
  2. In a medium saucepan combine half the berries, apples, juice and sugar on medium heat.  Cook, covered, for 3-4 minutes or until apples soften.  Stir in the remaining berries.
  3. Divide mixture evenly between six 3/4 cup ovenproof ramekins.  You could certainly use a pie dish instead and increase the cooking time by 5 minutes.
  4. In a medium bowl, combine all crumble ingredients.  Rub together.  Spoon evenly over the fruit in the ramekins.
  5. Bake for 12-15 minutes or until crisp and golden.
  6. Serve with yoghurt.  Yum!
