Citrus Power Balls

Time:   5-10 mins prep   Makes:  2 dozen Difficulty: Easy

Ingredients:

  • 1 cup cashews
  • 1/2 cup almonds
  • 1/2 cup dessicated coconut (extra for coating)
  • 2 lemons (zest and juice)

Method:

  • Mix all ingredients in food processor until well combined
  • Roll into balls and coat in extra coconut
  • Chill for an hour before serving
  • Store in fridge for best results
