Ingredients:
- 1 cup cashews
- 1/2 cup almonds
- 1/2 cup dessicated coconut (extra for coating)
- 2 lemons (zest and juice)
Method:
- Mix all ingredients in food processor until well combined
- Roll into balls and coat in extra coconut
- Chill for an hour before serving
- Store in fridge for best results
